About the role
The Hygiene Manager will lead food safety and sanitation programmes at Four Seasons’ luxury resort in Mauritius, ensuring all food preparation complies with the highest standards of hygiene and regulatory requirements.
Key responsibilities
- Monitor and verify that food items are handled and prepared according to validated HACCP limits.
- Update the HACCP plan and adjust process flow diagrams for catering operations as needed.
- Assess daily the integrity of prerequisite programmes, including GAP, GMP and SSOP standards.
- Conduct unbiased violation reporting and maintain high employee morale.
- Collect, label and store daily food samples from production areas for a mandatory three‑day rotating inventory.
- Coordinate sample collection for verification protocols and arrange testing with certified laboratories.
Required profile
- Proven experience in food safety management within a hotel or resort environment.
- Strong knowledge of HACCP, GAP, GMP and SSOP frameworks.
- Ability to conduct regular audits, update documentation and communicate findings clearly.
- Attention to detail in sample handling and record‑keeping.
