Commis – Hotel Kitchen Assistant

About the role

The Commis will support the kitchen team at Constance Le Chaland, a luxury resort on Mauritius' south‑eastern coast. Working under the supervision of the Executive Chef, the role involves preparing ingredients, assisting with buffet set‑up and ensuring food safety standards are met.

Key responsibilities

• Complete attendance sheets at the start of each shift.
• Check daily meals, liaise with the butcher for meat quantities, and verify fridge stock.
• Taste and assess leftover food for reuse, respecting consumption dates.
• Prepare vegetables, store and laminate products, and cook meals under supervision.
• Maintain a clean and safe work environment, clean equipment after use, and hand over properly to the next shift.
• Assist, train and coach trainees as required.

Required profile

• Middle or secondary education with relevant training or certificates.
• Mandatory food handler certificate.
• Minimum one year of experience in the hotel industry, preferably in a luxury resort.

Required skills

• Strong organizational abilities and attention to detail.
• Ability to work in a high‑pressure, fast‑paced environment.
• Good communication skills and fluency in English.
• Knowledge of food health and safety regulations.
