Chinese Chef

About the role

The Chinese Chef is responsible for preparing authentic Chinese cuisine, managing kitchen operations, and ensuring high culinary standards and food safety at Sofitel Mauritius L'Imperial Resort & Spa.

Key responsibilities

• Prepare and cook a wide variety of Chinese dishes, maintaining authentic taste and presentation standards.
• Develop and test new recipes to enhance the menu and introduce innovative dishes.
• Supervise kitchen staff, delegate tasks efficiently, and ensure smooth kitchen operations.
• Maintain cleanliness, organization, and hygiene in the kitchen at all times.
• Order and manage kitchen inventory, ensuring freshness and quality of ingredients.
• Ensure compliance with food safety regulations and hygiene standards.
• Balance flavors and techniques in wok cooking, noodle preparation, and other traditional Chinese methods.
• Manage food cost and work within a budget.
• Prepare Peking Duck and Sushi as part of the menu.

Required profile

• Minimum 3‑5 years experience as a Chinese Chef in a 5‑star property (mandatory).
• Commitment to ACCOR’s Sustainable Development program (Planet 21).
