Cluster Senior Internal Controller – Hospitality

About the role

The Cluster Senior Internal Controller will oversee internal control practices for two properties on Rodrigues – C Rodrigues and Constance Tekoma. Reporting to the Regional Financial Controller, the role ensures robust risk management, compliance, and continuous improvement of financial and operational processes across Food & Beverage and Spa departments.

Key responsibilities

• Implement, monitor and enforce Constance internal control policies for procurement, stock movements, transfers, consumption and cost of sales, focusing on Food & Beverage and Spa.
• Supervise Cost Control and Storekeeping teams, coordinating accurate and timely reporting in partnership with the Accounting Manager and Financial Controller.
• Control and record the flow of goods across receiving, storerooms, main kitchen and all F&B outlets, and participate in monthly, quarterly and year‑end inventories.
• Establish daily and monthly food‑and‑beverage costs, prepare profit‑and‑loss statements per outlet, and cost all recipes before menu inclusion.
• Analyse outlet performance, identify slow‑moving or high‑cost items, and provide monthly financial analysis for each outlet.
• Prepare month‑end closing reports for food, beverage, minibar, spa, shop and operating supplies, handling adjustments with the Regional Financial Controller.

Required profile

• Bachelor’s or Master’s degree in Accounting, Finance, Economics or Management.
• Professional certification preferred (ACCA Level 2 or full, CIMA, CPA or CIA).
• Minimum 10 years of internal‑control or cost‑control experience, including team management in 3‑ to 5‑star hotels in Mauritius.
