Commis Sommelier

About the role

We are looking for a motivated Commis Sommelier to join the wine team at Constance Le Chaland, a luxury resort on the south‑eastern coast of Mauritius. Working closely with the Head Sommelier and Outlet Sommelier, you will support daily wine service across the hotel’s restaurants and bars while maintaining the highest standards of cleanliness and presentation.

Key responsibilities

• Assist the Head Sommelier and Outlet Sommelier in all aspects of daily wine operations.
• Prepare and maintain the Mise en Place for wine service according to the hotel’s SOPs.
• Organise and verify wine deliveries, ensuring accurate stock records.
• Support wine service in any restaurant as required, following the Head Sommelier’s instructions.
• Execute standard decanting, carafing, wine and cigar service procedures.
• Communicate effectively with all hotel departments to ensure seamless service.

Required profile

• Secondary education; additional wine‑related training or certificates are a plus.
• Minimum 1 year of experience in a similar hotel or luxury resort role.
• Fluent in English, both written and spoken; additional language skills are advantageous.
• Strong desire to learn and develop within a high‑end hospitality environment.

Required skills

• Good knowledge of wines and ability to assess aromas.
• Proficiency in decanting, carafing, and cigar service techniques.
• Experience with Mise en Place preparation for wine service.
