Pastry Commis 2 – Luxury Resort Kitchen

About the role

The Pastry Commis 2 supports the pastry team at Four Seasons Mauritius, preparing high‑quality desserts and pastries in a luxury resort kitchen. Reporting to senior chefs, you will develop your technical skills while ensuring consistency and presentation standards.

Key responsibilities

• Prepare and cook menu items according to standard recipes, maintaining quality and consistency.
• Organise mise‑en‑place, including sauces, garnishes and accompaniments.
• Assist the Demi Chef or Chef de Partie with plating, portioning and station organization.
• Maintain a clean and sanitized workstation and handle stock rotation using FIFO principles.
• Support other outlets during peak periods, including banquet and staff meals.

Required profile

• Certificate in culinary arts (preferred) and a valid Food Handler’s Certificate.
• 1–2 years experience as a Commis 3 or equivalent in a high‑volume or luxury hotel kitchen.
• Ability to work standing for up to 8 hours, lift 20 kg and handle hot, fast‑paced environments.

Required skills

• Fundamental cooking methods such as grilling, frying and sautéing.
• Basic knowledge of Western and international pastry cuisine.
• Understanding of food safety standards (HACCP) and proper sanitation.
