Pastry Commis III – Breakfast Buffet

About the role

The Pastry Commis III – Breakfast Buffet supports the pastry team in delivering fresh, high‑quality breakfast pastries for the Four Seasons Resort Mauritius at Anahita. The role ensures that all bakery items are prepared, presented and replenished to Four Seasons standards, creating an exceptional start to guests' day.

Key responsibilities

• Prepare and bake daily breakfast items such as croissants, pain au chocolat, Danish pastries, muffins, brioche and other sweet specialties.
• Set up and maintain attractive buffet displays, ensuring continuous replenishment throughout service.
• Complete mise en place, including doughs, batters, fillings and toppings, following production schedules.
• Follow HACCP and food‑safety procedures, manage stock rotation (FIFO) and maintain a clean workstation.
• Assist senior chefs with pastry production, support inventory counts and help minimise food waste.

Required profile

• Certificate in Pastry Arts, Bakery, Culinary Arts or equivalent vocational training (preferred).
• 6 months to 1 year experience in a pastry, bakery, hotel or restaurant environment; luxury hospitality experience is a plus.
• Strong work ethic, reliability, punctuality and a guest‑focused mindset.
