Pastry Sous Chef

About the role

Constance Le Chaland, a luxury resort on Mauritius' south‑eastern coast, is seeking a Pastry Sous Chef to lead its pastry operations. You will work in a serene, ocean‑view environment, creating high‑quality desserts and pastries that reflect the resort’s refined hospitality standards.

Key responsibilities

• Develop and test new dessert and pastry recipes, ensuring creative presentation.
• Maintain impeccable cleanliness and hygiene of the pastry shop and all equipment.
• Supervise, motivate and discipline pastry staff, ensuring grooming standards.
• Plan daily production according to menus and special events.
• Create decorative elements for buffets and food displays.
• Manage stock, place orders, and control food costs.
• Coordinate preventive maintenance with the hotel Maintenance Manager.
• Report operational performance in management meetings.

Required profile

• Middle or secondary education with relevant culinary training; food‑handler certificate mandatory.
• Minimum 3 years of pastry experience in a hotel or luxury resort setting.
• Strong creativity, organizational and time‑management abilities.
• Leadership and training skills to develop the pastry team.
• Ability to work under pressure while maintaining high standards.
