Senior Sushi Chef de Partie (Foreign Worker Visa)

About the role

Four Seasons Mauritius is seeking a talented Senior Chef de Partie specialized in sushi to join its culinary team. This position is part of the Foreign Worker Initiative, offering visa sponsorship and shared accommodation for up to three years.

Key responsibilities

• Prepare and present sushi, sashimi, nigiri, maki and other Japanese dishes while ensuring freshness and consistency.
• Maintain high standards of hygiene, food safety and workstation cleanliness.
• Support the Chef de Cuisine and Sous Chefs in daily kitchen operations, including mise en place, ordering and stock rotation.
• Minimize waste through proper portion control and waste‑reduction initiatives.

Required profile

• Minimum 3–5 years of experience as a Sushi Chef or Senior Chef de Partie.
• Strong knife skills and deep knowledge of Japanese cuisine.
• Basic English communication skills and a positive, team‑oriented attitude.
• Experience in luxury hotels or upscale Japanese restaurants is preferred.
