Assistant Chef de Partie

About the role

We are looking for an Assistant Chef de Partie to join the culinary team at Constance Prince Maurice, a luxury resort in Roches Noires, Mauritius. In this position you will support the Chef de Partie in delivering high‑quality dishes for discerning guests while maintaining the resort’s standards of excellence.

Key responsibilities

• Assist the Chef de Partie in managing the assigned kitchen section and preparing mise‑en‑place.
• Cook and plate food items according to hotel recipes, ensuring taste, quality and presentation.
• Supervise and guide Commis Chefs when required.
• Maintain proper storage, labeling and FIFO rotation of all food items.
• Follow HACCP, hygiene and safety standards at all times.
• Control wastage, support stock management and keep the work area clean and organized.
• Report equipment malfunctions or quality issues to superiors.

Required profile

• Certificate or Diploma in Culinary Arts or equivalent.
• 1–2 years of experience in a similar hotel or restaurant role.
• Knowledge of food safety and HACCP standards.
• Ability to work under pressure in a fast‑paced environment.
• Good teamwork and communication skills.
• Flexibility to work shifts, weekends and public holidays.
