Chef de Partie – Asian Cuisine

About the role

We are seeking an experienced and passionate Chef de Partie (Asian Cuisine) to join our culinary team at Constance Prince Maurice, a prestigious luxury resort in Mauritius. The role offers a clear path to progress into a Sous Chef position.

Key responsibilities

• Oversee daily operations of the Asian cuisine section, ensuring dishes meet exacting quality and presentation standards.
• Prepare and present authentic Chinese, Japanese, Thai, or fusion dishes to the highest standards.
• Develop and refine Asian menus, creating innovative dishes that showcase expertise in Asian flavour profiles.
• Supervise Demi Chefs de Partie, Commis Chefs, and kitchen assistants, providing on‑the‑job training and guidance.
• Maintain rigorous food safety and hygiene standards, complying with all health and safety regulations.
• Manage stock control and inventory for the section, minimising waste while ensuring optimal ingredient availability.
• Collaborate with the Head Chef to ensure seamless kitchen operations during service.
• Monitor food costs and portion control, contributing to efficient kitchen budget management.

Required profile

• Minimum 3 years of experience in a similar role within a luxury hotel or high‑end Asian restaurant.
• Strong expertise in Asian culinary techniques, ingredients, and presentation standards.
• Fluent in English; additional languages are an advantage.
• Ability to work under pressure while maintaining exceptional quality.
• Flexible to work shifts, including evenings, weekends, and public holidays.
