Chef De Partie

About the role

Constance Le Chaland, a luxury hotel on the south‑eastern coast of Mauritius, is looking for a motivated Chef de Partie to join its culinary team. You will work under the direction of the Executive Chef and Sous Chef, preparing dishes to the highest standards while maintaining a clean and safe kitchen environment.

Key responsibilities

• Assist with breakfast service and ensure proper handling of M.E.P. (mise en place) items.
• Prepare food according to orders from the Executive Chef, Sous Chef, or Chef de Partie.
• Maintain cleanliness and sanitation of workstations, covering dishes before refrigeration.
• Train subordinate staff in daily duties and kitchen hygiene.
• Report equipment malfunctions and ensure all tools are in good working condition.
• Support other kitchen stations when required.

Required profile

• High school diploma or equivalent, preferably with a culinary school qualification.
• Minimum 2 years experience in the hotel industry, including at least 1 year in a similar role.
• Fluent in English, written and spoken; additional language is a plus.

Required skills

• Proficient in a variety of cooking methods, ingredients, equipment, and tools.
• Strong knowledge of food safety and sanitation best practices.
• Ability to work efficiently under pressure and manage time effectively.
