Commis 3 – Entry Level Kitchen Position

About the role

The Commis 3 is an entry‑level culinary position at Four Seasons Mauritius, supporting the kitchen brigade with food preparation, station cleanliness and basic cooking tasks in a high‑end resort environment.

Key responsibilities

• Prepare vegetables, meats, sauces and other ingredients under the direction of senior chefs (35% of time).
• Set up and organise mise‑en‑place for the assigned station before service (20%).
• Maintain cleanliness of work area, tools and equipment, adhering to sanitation standards (15%).
• Assist chefs with plating, garnishing and assembling dishes during service (15%).
• Help receive deliveries, label, store items correctly and rotate stock (10%).
• Observe senior chefs, attend training and participate in knowledge sharing (5%).

Required profile

• Basic culinary training or food production course (preferred).
• Valid Food Handler’s Certificate (required).
• Ability to stand up to 8 hours, lift 20 kg and work in hot kitchen environments.
• Reliability, punctuality and attention to detail.

Required skills

• Understanding of basic kitchen operations and food preparation techniques.
• Knowledge of hygiene and sanitation regulations.
• Ability to follow safety policies and use kitchen equipment responsibly.
