Head Baker – Lead Bakery Operations

About the role

Four Seasons is seeking a passionate Head Baker to lead bakery operations at its luxury resort in Mauritius. Reporting to the Executive Pastry Chef, you will oversee the production of breads, viennoiserie, breakfast pastries and other bakery items, ensuring the highest standards of quality, consistency and presentation for our guests.

Key responsibilities

• Supervise daily bakery operations and support the team in all production activities.
• Plan and organise production schedules, mise en place and stock rotation.
• Maintain strict hygiene, HACCP and food‑safety standards throughout the bakery.
• Monitor inventory levels, place orders and control wastage to support cost‑management initiatives.
• Train, motivate and develop bakery team members.
• Assist the Executive Pastry Chef and culinary leadership when required.

Required profile

• Strong technical baking knowledge with experience at a Junior Sous Chef level.
• Proven leadership and team‑supervision abilities.
• Commitment to maintaining high quality, consistency and safety standards.
• Ability to work in a fast‑paced, luxury resort environment.
