About the role

The Pastry Commis III – Breakfast Buffet prepares and presents breakfast pastry items for the Four Seasons Resort Mauritius at Anahita, ensuring high quality and consistency.

Key responsibilities

  • Prepare and bake daily breakfast pastries such as croissants, pain au chocolat, Danish pastries, muffins, and brioche according to recipes.
  • Set up and maintain attractive buffet displays, replenish items throughout service, and ensure cleanliness of the buffet area.
  • Follow HACCP and food‑safety procedures, manage stock rotation (FIFO), and assist with inventory counts.

Required profile

  • Certificate in Pastry Arts or equivalent vocational training (preferred).
  • 6 months to 1 year experience in a pastry, bakery, hotel or restaurant environment.
  • Ability to work early mornings, weekends and public holidays, standing for long periods.

Required skills

  • Basic pastry and bakery techniques, including laminated dough preparation.
  • Operation of pastry equipment safely.
  • Knowledge of HACCP, food safety standards and proper stock handling.
