Assistant Director, Food & Beverage

About the role

The Assistant Director of Food & Beverage will support the Director in overseeing all food and beverage operations at One&Only Le Saint Géran, a luxury resort in Mauritius. This position ensures exceptional guest experiences, operational excellence, and strong financial performance across restaurants, bars, in‑room dining, banquets, and events.

Key responsibilities

• Assist the Director in managing day‑to‑day operations of all F&B outlets.
• Monitor financial performance, budgeting, and cost control measures.
• Drive service standards to deliver memorable guest experiences.
• Lead, coach, and develop a large, multi‑disciplinary team.
• Ensure compliance with health, safety, HACCP and quality assurance standards.
• Support strategic initiatives and continuous improvement projects.

Required profile

• Degree or diploma in Hospitality Management, Hotel Management, Business Administration or related field.
• 5‑7 years of senior F&B management experience in a luxury hotel or resort.
• Proven track record managing multiple outlets and large teams.
• Strong commercial acumen and financial insight.

Required skills

• Microsoft Office proficiency.
• Experience with hospitality management systems.
