Chef de Partie – Asian Cuisine

About the role

We are looking for an experienced Chef de Partie to lead the Asian cuisine section at a luxury resort in Mauritius. The role focuses on preparing authentic Asian dishes while maintaining high standards of quality and innovation, with a clear path toward a Sous Chef position.

Key responsibilities

• Oversee daily operations of the Asian cuisine section, ensuring precise preparation and presentation of dishes.
• Develop and refine Asian menus, creating innovative dishes that showcase expertise in Chinese, Japanese, Thai, or fusion cuisine.
• Supervise and train Demi Chefs de Partie, Commis Chefs, and kitchen assistants.
• Maintain rigorous food safety and hygiene standards and ensure compliance with health regulations.
• Manage stock control and inventory for the section, minimizing waste while maintaining ingredient availability.
• Collaborate with the Head Chef to ensure seamless kitchen operations during service.
• Monitor food costs and portion control to support efficient kitchen budgeting.

Required profile

• Minimum 3 years of experience in a similar role within a luxury hotel or high‑end Asian restaurant.
• Strong expertise in Asian culinary techniques, ingredients, and presentation standards.
• International exposure is highly desirable.
• Fluent in English; additional languages are a plus.
• Ability to work under pressure while maintaining exceptional quality.
• Flexible to work shifts, including evenings, weekends, and public holidays.
