Chef De Partie - Indian Speciality Cuisine

About the role

Constance Le Chaland, a luxury hotel in Plaine Magnien on the south-eastern coast of Mauritius, is hiring a Chef de Partie for its Indian speciality cuisine kitchen. The hotel is described as having contemporary architecture, light-filled spaces and ocean views, in a setting that encourages collaboration and pride in delivering a refined hospitality experience.

Key responsibilities

• Prepare food as ordered by the Executive Chef or Sous Chef, producing dishes according to recipes, photos and set standards.
• Help the Chef and assist other cooks in any department when asked.
• Train subordinate staff in their daily duties.
• Ensure the kitchen is clean and tidy, including clearing and storing leftover M.E.P. (mise en place) and covering dishes before they enter the cold room.
• Clean and sanitise the work area after each dish, and report any equipment malfunctions to the Chef's office.
• Maintain a safe work environment and report or fix safety hazards.
• Perform any other duties assigned by management.

Required profile

• High school diploma or equivalent, plus a culinary school qualification.
• At least 2 years of experience in the hotel industry.
• At least 1 year of professional experience on a similar position.
• Fluency in English or another language, written and spoken; knowledge of a second language is a plus.

• Excellent use of cooking methods, ingredients, equipment and processes.
• Knowledge of best practices for safety and sanitation.
• Ability to multitask, manage time and work efficiently under pressure.
• Good communication and interpersonal skills.
