Demi Chef de Partie

About the role

Constance Le Chaland, a luxury resort on the south-eastern coast of Mauritius, is hiring a Demi Chef de Partie through its partner Hosco in Plaine Magnien. The hotel is set in a preserved natural environment with ocean views, and the role involves preparing dishes to order, supervising kitchen staff and keeping the kitchen clean and safe.

Key responsibilities

• Help with the morning meal preparation (M.E.P.), check that it is cleared and store leftovers in the refrigerator with dating, and clear unused M.E.P. in a covered container.
• Prepare food to order from the Executive Chef, Sous Chef or Chef de Partie, producing dishes according to recipes, photos and set standards.
• Supervise and train kitchen staff in their daily duties and help other cooks in any department when asked.
• Ensure the kitchen is clean and tidy, and that equipment is cleaned and in good working condition at the end of each shift.
• Maintain a safe work environment and report or fix safety hazards.
• Clean and sanitize the workspace after each dish, and cover dishes with foil or film before storing them in the cold room.

Required profile

• High school diploma or equivalent, plus a culinary school qualification.
• Certification in Food & Safety and in Health & Safety.
• At least 3 years of experience in the hotel industry; 1 year on a similar position is a plus; proven experience in a top luxury resort is a plus.
• Fluency in English or another language, written and spoken; knowledge of a second language is a plus.

• Excellent cooking skills and knowledge of various cooking methods, ingredients, equipment and processes.
• Strong organizational skills, multitasking and attention to detail.
• Ability to work in a high-pressure, fast-paced environment.
• Knowledge of best practices for safety and sanitation.
