Cost Controller

About the role

Constance Prince Maurice, a luxury resort on the northeast coast of Mauritius, is looking for a Cost Controller. The role monitors, analyses and controls the organisation's costs so that resources are used efficiently and approved budgets are adhered to. It covers purchases, inventory, food and beverage costs, stock movements and operational expenses, and produces accurate financial reports and cost-saving recommendations.

Key responsibilities

• Monitor daily operational costs and analyse food, beverage, departmental and operational costs, preparing regular cost reports and investigating variances.
• Monitor stock levels, conduct and supervise regular physical stock counts, reconcile inventory with system records and review slow-moving and excess stock.
• Review purchase orders, invoices and receiving records, verify goods received against approved orders and prices, and monitor supplier pricing.
• Work with Purchasing and Stores to follow proper purchasing and receiving procedures, and assist in reviewing supplier quotations.
• Calculate and monitor food and beverage costs, analyse recipe costs, portion sizes, selling prices and gross profit margins, and track food and beverage wastage.
• Prepare daily, weekly and monthly cost-control reports, variance analysis and assist with monthly closing and financial reporting.
• Maintain cost-control records, check for control weaknesses, support internal and external audits, and provide financial information to management.
• Work with Finance, Procurement, Stores, Food & Beverage, Kitchen and other departments, guide operational teams on cost-control procedures and support cost-saving initiatives.

Required profile

• Diploma or degree in Accounting, Finance, Business Management or a related field.
• 2-3 years of relevant experience in cost control, accounting, finance or inventory management.
• Hospitality experience is an advantage.
• Good knowledge of inventory and cost-control procedures.

Required skills

• Experience with accounting or inventory management systems.
• Proficiency in Microsoft Excel and other Microsoft Office applications.
