Cost Controller

About the role

Constance Prince Maurice, a luxury resort on the northeast coast of Mauritius, is hiring a Cost Controller through its partner Hosco in Roches Noires. The role monitors, analyses and controls the organisation's costs so that resources are used efficiently and approved budgets are respected. It covers purchases, inventory, food and beverage costs, stock movements and operational expenses, and produces accurate financial reports and cost-saving recommendations.

Key responsibilities

• Monitor daily operational costs and analyse food, beverage, departmental and operational costs, preparing regular cost reports and investigating variances.
• Monitor stock levels, conduct and supervise regular physical stock counts, reconcile inventory with system records and review slow-moving and excess stock.
• Review purchase orders, invoices and receiving records; verify goods received match approved orders and agreed prices; monitor supplier pricing.
• Liaise with Purchasing and Stores, assist in reviewing supplier quotations and identify cost-saving opportunities.
• Calculate and monitor food and beverage costs, analyse recipe costs, portion sizes, selling prices and gross profit margins, and monitor food and beverage wastage.
• Work with the Executive Chef, F&B Manager and Purchasing team to improve cost efficiency, and prepare daily, weekly and monthly cost-control reports.
• Assist with monthly closing, variance analysis between actuals, budgets and forecasts, and maintain cost-control records and supporting documentation.
• Support internal and external audits, ensure compliance with policies and procedures, and guide operational teams on cost-control procedures.

Required profile

• Diploma or degree in Accounting, Finance, Business Management or a related field.
• 2-3 years of relevant experience in cost control, accounting, finance or inventory management.
• Hospitality experience is an advantage.
• Good knowledge of inventory and cost-control procedures.

Required skills

• Experience with accounting or inventory management systems.
• Proficiency in Microsoft Excel and other Microsoft Office applications.
