Sommelier

About the role

Four Seasons Mauritius is looking for a Sommelier. The Sommelier selects wines, builds and maintains a wine list suited to the outlet's price, products and presentation, and acts as a wine consultant for conference services and catering clients.

Key responsibilities

• Build a motivated, skilled team, coach and train staff, and manage the department efficiently within company policy
• Prepare annual plans and budgets, keep departmental records and ensure compliance with the code of conduct and grooming standards
• Greet guests, recommend wines compatible with menu items, assist servers with wine service and check back with guests
• Host the hotel wine reception, keep in touch with the wine storeroom and meet with purveyors on products and discounts
• Revise the wine list continuously, make pricing recommendations, deplete dead stock and create wine programs and PR events
• Train staff on new products, communicate daily with restaurant and F&B managers, and perform server duties when scheduled

Required profile

• Certificate or diploma, preferably in hotel or restaurant management
• 1-2 years of experience in 5-star hotels/resorts or reputable restaurants
• Extensive knowledge of wines and menu items and their preparation
• Management skills, business acumen, strong guest relations skills and good English and French
