Chef de Partie – Asian Cuisine

About the role

Constance Prince Maurice, a luxury resort on the northeast coast of Mauritius, is looking for an experienced Chef de Partie to lead its Asian cuisine section. You will be responsible for preparing authentic Asian dishes, developing innovative menus, and maintaining the highest standards of quality and presentation.

Key responsibilities

• Oversee daily operations of the Asian cuisine station, ensuring precise preparation and immaculate plating.
• Prepare and present authentic Chinese, Japanese, Thai, and fusion dishes.
• Develop and refine Asian menus, introducing creative dishes that showcase regional flavours.
• Supervise Demi Chefs de Partie, Commis Chefs and kitchen assistants, providing on‑the‑job training.
• Maintain strict food safety and hygiene standards in compliance with health regulations.
• Manage stock control and inventory for the section, minimizing waste while ensuring ingredient availability.
• Collaborate with the Head Chef to ensure seamless service flow.
• Monitor food costs and portion control to support the kitchen budget.
• Uphold professional personal hygiene and appearance at all times.

Required profile

• Minimum 3 years of experience in a similar role within a luxury hotel or high‑end Asian restaurant.
• Strong expertise in Asian culinary techniques, ingredients and presentation.
• International exposure is a plus.
• Fluent English; additional languages are advantageous.
• Ability to work under pressure while maintaining exceptional quality.
• Passion for gastronomy and luxury hospitality.
• Flexibility to work evenings, weekends and public holidays.
• Ambition to progress to a Sous Chef position.
