Senior Sushi Chef de Partie (Foreign Worker Visa)

About the role

Four Seasons Resort Mauritius is seeking a talented Senior Chef de Partie specialized in sushi to join its culinary team. This position is part of the Foreign Worker Initiative, offering expatriates the chance to work in a luxury hospitality environment on the east coast of Mauritius.

Key responsibilities

• Prepare and present sushi, sashimi, nigiri, maki and other Japanese dishes.
• Maintain freshness, quality and consistency of all products.
• Uphold high standards of hygiene and food safety.
• Support the Chef de Cuisine and Sous Chefs in daily kitchen operations.
• Assist with mise en place, ordering and stock rotation.
• Minimize waste and ensure proper portion control.
• Keep the workstation clean and well‑organized at all times.

Required profile

• Strong technical knowledge of Japanese cuisine.
• Excellent knife skills.
• Proven experience preparing high‑quality sushi and sashimi in a fast‑paced environment.
• Willingness to work in an international, multicultural setting.
