Assistant Cook

About the role

We are looking for an Assistant Cook to join the kitchen team at One&Only Le Saint Géran, a luxury resort in Mauritius. The role supports daily food preparation, maintains hygiene standards, and ensures smooth service across breakfast, lunch and dinner.

Key responsibilities

• Perform general cleaning of all kitchen sections and work surfaces before and after each service.
• Receive, store, label and date‑code all food items, ensuring proper rotation (FEFO) in chillers, freezers and dry stores.
• Assist in daily food preparation and mise en place for all meals, following the Chef’s recipes.
• Conduct regular equipment checks, report defects and ensure all tools are in good working order.
• Monitor expiry dates, maintain HACCP standards and uphold strict food safety and sanitation procedures.
• Communicate promptly with supervisors, report incidents, and participate in ongoing training.

Required profile

• Reliability and punctuality with a positive attitude toward supervisors and colleagues.
• Good personal grooming and adherence to hotel hygiene standards.
• Ability to work efficiently during busy service periods and follow instructions accurately.
• Willingness to learn new cooking techniques and share ideas for improvement.

Required skills

• Knowledge of HACCP food safety standards.
• Basic food labeling, storage and inventory rotation practices.
