Assistant Cook

About the role

We are looking for an Assistant Cook to join the kitchen team at One&Only Le Saint Géran, a luxury resort in Mauritius. The role supports daily food preparation, maintains high standards of hygiene and safety, and ensures smooth operation of all kitchen sections.

Key responsibilities

• Perform general cleaning of all kitchen sections and work surfaces before and after each service.
• Label and date all food stored in refrigerators, ensuring proper documentation.
• Receive, inspect, and store goods from dry store, deep freeze, and fresh produce, checking quality.
• Maintain HACCP standards and monitor expiry dates of all food items.
• Rotate stock using FEFO principles to minimise waste and spoilage.
• Prepare daily mise en place for breakfast, lunch, and dinner services.
• Follow recipes provided by the Restaurant Chef and ensure consistency of dishes.
• Inspect kitchen equipment daily, log any defects and report to the manager.
• Adhere to safety and sanitation policies when handling food and beverages.
• Communicate promptly with supervisors and report incidents immediately.

Required profile

• Punctual, reliable and able to work on a fixed schedule.
• Positive attitude towards supervisors and team members.
• Good personal grooming in line with hotel standards.
• Strong commitment to hygiene and food safety.
• Willingness to participate in ongoing training.

Required skills

• HACCP compliance.
