Commis de Cuisine

About the role

Constance Le Chaland, a luxury resort on the south-eastern coast of Mauritius, is hiring a commis through its partner Hosco in Plaine Magnien. The role covers kitchen preparation, cooking under supervision and supporting the chef, in a calm, collaborative environment.

Key responsibilities

• Fill in attendance sheets as soon as duty resumes.
• Check the day's menu and liaise with the butcher on the amount of meat needed.
• Check the fridge, inform the chef and make the requisition for the day.
• Verify whether food from the previous setup can still be used, paying close attention to dates of consumption.
• Start the daily kitchen setup, chop the vegetables needed and store and laminate all products.
• Cook meals under the supervision of the superior.
• Keep the workspace safe and clean, clean kitchen equipment after use and hand over properly to the next shift.
• Prepare food and set up for the buffet.
• Train, assist and coach trainees, and perform any other duties assigned by the Executive Chef.

Required profile

• Middle or secondary education; additional training or certificates in the field are a plus.
• Food handler certificate is mandatory.
• At least 1 year of experience in the hotel industry; proven experience in a top luxury resort is a plus.
• Fluency in English or another language, written and spoken; knowledge of a second language is a plus.

Required skills

• Sound knowledge of food health and safety regulations.
• Self-motivation, strong organisation, attention to detail and ability to work in a fast-paced, high-pressure environment.
• Good communication skills and willingness to learn.
