Commis III - Kitchen

About the role

RIU Hotels & Resorts is hiring a Commis III for its kitchen department at RIU Turquoise and RIU Palace in Le Morne, Mauritius. The Commis III supports the kitchen team in preparing high-quality food while keeping hygiene, safety and service standards, in a fast-paced resort environment.

Key responsibilities

• Assist chefs and kitchen team members with daily food preparation and basic cooking tasks
• Prepare ingredients such as vegetables, meats, seafood, sauces and garnishes according to recipes and standards
• Keep workstations, equipment, storage and service areas clean and organised
• Follow food safety, sanitation and personal hygiene standards
• Support buffet, restaurant, banquet and other food production operations as assigned
• Store food correctly and monitor quality, freshness and labelling
• Help receive, check and organise kitchen supplies and deliveries
• Use kitchen tools and equipment safely, minimise food waste and follow portion and cost control procedures
• Work with colleagues across the kitchen and Food & Beverage Department and carry out other reasonable duties assigned by the Chef or Kitchen Supervisor

Required profile

• Previous experience in a hotel, restaurant, catering or commercial kitchen is preferred
• Basic knowledge of food preparation, cooking methods and kitchen hygiene
• Ability to follow recipes, instructions and food safety procedures accurately
• Positive attitude, willingness to learn and strong teamwork skills
• Good time management and ability to work efficiently under pressure
• Physical ability to stand for long periods and handle kitchen equipment safely
• Flexibility to work shifts, weekends and holidays
• Basic English is an advantage
