Chef de Partie – Arabic Cuisine

About the role

Join the culinary team at Constance Le Chaland, a luxury hotel on the south‑eastern coast of Mauritius. As a Chef de Partie specializing in Arabic cuisine, you will support breakfast service, prepare dishes to exact standards, and maintain a clean, safe kitchen environment.

Key responsibilities

• Assist with breakfast mise en place (M.E.P.) and ensure proper clearing and storage of leftovers.
• Prepare food according to orders from the Executive Chef or Sous Chef, following recipes, photos, and set standards.
• Maintain a tidy, sanitized work area; cover dishes before refrigeration to prevent contamination.
• Train subordinate staff in daily duties and report any equipment malfunctions.
• Support other kitchen stations when required and ensure all M.E.P. tasks are completed before service.
• Uphold safety and sanitation standards, reporting and rectifying hazards promptly.

Required profile

• High school diploma or equivalent, with a culinary school qualification.
• Food & Safety certification.
• Minimum 2 years hotel industry experience, including at least 1 year in a similar Chef de Partie role.

Required skills

• Proficiency in various cooking methods and techniques.
• Knowledge of food safety and sanitation best practices.
• Ability to operate kitchen equipment and tools efficiently.
• Strong multitasking and organizational abilities under pressure.
