Commis I - Butcher

About the role

RIU Mauritius, which hosts the island's largest hotel cluster on the Le Morne Brabant peninsula, is hiring a Commis I Butcher for its kitchen team. The butcher prepares high-quality dishes and contributes to the success of the culinary operations, in a position suited to culinary professionals ready to take on more responsibility.

Key responsibilities

• Cut, bone, trim and portion beef, pork, poultry and seafood according to standard yields and chef specifications.
• Inspect incoming meat deliveries for freshness, correct weight and quality.
• Store meats in freezers and chillers at the right temperature and rotate stock FIFO (first in, first out).
• Operate and clean butchery equipment safely (saws, grinders, knives, slicers) and keep the work area clean and sanitized in line with HACCP.
• Minimise food waste by maximising yields and using trimmings for stocks or stews where appropriate.

• Proven experience in a professional kitchen.
• Advanced culinary skills and techniques.
• A deep passion for gastronomy and a drive to excel in the culinary field.
