Head Waiter

About the role

One&Only Le Saint Géran, a luxury resort in Mauritius, is looking for a Head Waiter. The role delivers friendly, efficient customer service and a warm, welcoming atmosphere, with the aim of retaining and attracting customers while maintaining an exceptional standard of service. The Head Waiter reports to the Assistant Manager, Restaurant/Manager, Restaurant.

Key responsibilities

• Directly supervise, train and monitor the performance of subordinates.
• Ensure all tables in the section are set on time with chinaware, silverware, glassware and linen; help set tables when there are time constraints or staff shortages.
• Mentor and train new recruits on the job.
• Escort guests to their tables, present menus, suggest courses and beverages, and answer questions about the menu.
• Keep watch over the assigned area, resolve problems politely and ensure high-quality food and service.
• Supervise and take part in kitchen and dining area cleaning, and keep the section clean and tidy.
• Resolve customer complaints about food service and take special orders.
• Assign duties and workstations, inspect supplies and equipment, and control inventories of food, equipment and small ware, reporting shortages to management.
• Develop equipment maintenance schedules, arrange repairs, and recommend improvements to work procedures and job safety.
• Present bills, accept payments, and pass on guests' dietary requirements to the chefs.
• Collect, bring back and store linen, and polish and store equipment before closing.

Required profile

• School Certificate and National Certificate level 3 in Restaurant and Bar Service.
• At least 2 years of experience in the same role in an international ultra-luxury resort.
• Fluent written and spoken English and French.
• Ability to work as a team.
