Chef De Partie

About the role

Constance Le Chaland, a luxury hotel on the south-eastern coast of Mauritius, is looking for a Chef De Partie. The role prepares dishes according to the orders of the Executive Chef and Sous Chef, keeps the kitchen clean and helps the team during service.

Key responsibilities

• Help with the breakfast M.E.P., check that it is cleared and store leftovers in the refrigerator
• Prepare food as ordered by the Executive Chef or Sous Chef, following recipes, photos and set standards
• Train subordinate staff in their daily duties and help other cooks in any department when asked
• Keep work areas clean, tidy and sanitized, and cover dishes with foil or film paper before storing them in the cold room
• Clean equipment after each shift and report any malfunctions to the Chef's office
• Maintain a safe work environment and report or fix safety hazards
• Perform any other duties assigned by management

Required profile

• High school diploma or equivalent, or a culinary school qualification
• Certification in Food & Safety
• At least 2 years of experience in the hotel industry, including at least 1 year in a similar position
• Fluency in English or another language, written and spoken; knowledge of a second language is a plus

• Excellent use of cooking methods, ingredients, equipment and processes
• Knowledge of best practices for safety and sanitation
• Ability to work efficiently under pressure and manage time well
• Good communication and interpersonal skills
