Commis 2 - Asian Cuisine

About the role

Four Seasons Mauritius is hiring a Commis 2 for its Asian kitchen (Awase, Japanese / Pan-Asian outlet). The Commis 2 assists in the daily preparation and production of Asian dishes, ensuring they are made according to recipes, quality standards and food safety regulations, while supporting the smooth operation of the Asian kitchen section. The position reports to the Chef de Cuisine / Executive Sous Chef.

Key responsibilities

• Assist in preparing and cooking Asian dishes, including Chinese, Thai, Japanese, Korean and other Asian cuisines.
• Prepare ingredients such as vegetables, meats, seafood, noodles, rice, sauces, stocks and marinades.
• Follow recipes, portion controls and presentation standards set by the senior chefs.
• Help with mise en place so that ingredients are ready before service.
• Maintain cleanliness and hygiene in the kitchen, workstations, utensils and equipment.
• Follow food safety standards, including storage, temperature control, labelling and FIFO stock rotation.
• Support the Chef de Partie during daily operations and busy service periods.
• Receive, check and store kitchen supplies, and help minimise food waste.
• Follow company policies, HACCP procedures and health and safety regulations.

Required profile

• Basic cooking and knife skills.
• Knowledge of Asian sauces, spices, noodles, rice and seasonings.
• Good organisational and time-management skills, attention to detail and ability to follow instructions and standard recipes.
• Teamwork, communication and willingness to learn.
• Ability to stay clean and work efficiently in a fast-paced environment.
