Demi Chef De Partie

About the role

Constance Le Chaland, a luxury resort on the south-eastern coast of Mauritius, is hiring a Demi Chef De Partie. The role covers kitchen production, food preparation and supervision of kitchen staff, with duties that may extend beyond the listed scope at management discretion.

Key responsibilities

• Help with the breakfast M.E.P., check that it is cleared and store leftovers in the refrigerator with a dating procedure
• Prepare food to order from the Executive Chef, Sous Chef or Chef de Partie, producing dishes according to recipes, photos and set standards
• Supervise and train kitchen staff in their daily duties
• Ensure the kitchen is clean and tidy, and that work areas are sanitized after each dish is cooked
• Clean and report any malfunction of equipment used during the shift
• Help other cooks in any department when asked, and assist in preparing food items to meet guest requests
• Maintain a safe work environment and report or fix safety hazards
• Perform other duties assigned by management

Required profile

• High school diploma or equivalent, plus a culinary school qualification
• Certification in Food Safety and in Health and Safety
• At least 3 years of experience in the hotel industry
• At least 1 year of experience in a similar position is a plus; proven experience in a top luxury resort is a plus
• Fluency in English, written and spoken; knowledge of a second language is a plus

• Excellent cooking skills and knowledge of various cooking methods, ingredients, equipment and processes
• Strong organizational skills, multitasking and attention to detail
• Ability to work in a high-pressure, fast-paced environment
• Knowledge of best practices for safety and sanitation
