Sommelier

About the role

One&Only Le Saint Géran, a luxury resort on a private peninsula in Mauritius, is looking for a Sommelier. The Sommelier delivers exceptional wine service and creates memorable dining experiences through expert recommendations, pairings and service. The role covers wine service standards, cellar and inventory management, support for sales initiatives and education of guests and colleagues, while acting as a brand ambassador for the resort's luxury standards.

Key responsibilities

• Provide professional wine recommendations and food pairing suggestions, and help guests choose wines that suit their meal.
• Deliver wine service in line with resort standards and etiquette, and ensure proper handling, storage, decanting and serving of wines.
• Maintain knowledge of the wine list, vintages, grape varieties, regions and producers, and support the Head Sommelier in developing and updating wine lists.
• Monitor and maintain wine inventory and storage conditions, conduct regular stock checks and report discrepancies.
• Promote wine sales through effective upselling.
• Educate and train restaurant colleagues on wine knowledge and service standards.
• Maintain wine equipment, glassware and cellar areas in good condition, and handle guest inquiries and complaints professionally.
• Comply with health, safety and responsible alcohol service regulations, and perform other duties assigned by management.

Required profile

• Diploma or certification in Hospitality, Food & Beverage, Wine Studies or a related field.
• Professional wine qualification (WSET, Court of Master Sommeliers or equivalent) is an advantage.
• Minimum of 2 years' experience as a Sommelier or in a similar luxury hospitality environment.
• Excellent communication in English; additional languages are an advantage.
• Ability to work flexible hours, including weekends and public holidays, and to meet professional grooming standards.

Required skills

• Strong knowledge of wines, grape varieties, regions and food pairing principles.
• Confident recommendation and upselling of premium wines.
• Organizational and inventory management skills.
