Butcher – Kitchen Team (Commis I)

About the role

Join the culinary team at RIU Turquoise and RIU Palace Mauritius as a Butcher (Commis I). You will work in a dynamic hotel kitchen, preparing high‑quality meat products and supporting the overall success of our food service operations.

Key responsibilities

• Cut, bone, trim and portion beef, pork, poultry and seafood according to standard yields and chef specifications.
• Inspect incoming meat deliveries for freshness, correct weight and quality.
• Store meats in freezers and chillers at proper temperatures and manage stock rotation using FIFO.
• Operate and clean butchery equipment such as saws, grinders, knives and slicers while maintaining a sanitized work area.
• Minimize waste by maximizing yields and repurposing trimmings for stocks or stews.

Required profile

• Proven experience working in a professional kitchen with advanced culinary techniques.
• Strong passion for gastronomy and a drive to excel in the culinary field.

Required skills

• Meat cutting, boning and portioning.
• Operation of butchery equipment (saws, grinders, slicers).
• Food safety knowledge, specifically HACCP standards.
