Chef De Partie - Indian Speciality Cuisine

About the role

Constance Le Chaland, a luxury hotel on the south-eastern coast of Mauritius, is looking for a Chef De Partie specialising in Indian cuisine. The role involves preparing dishes according to the orders of the Executive Chef and Sous Chef, keeping the kitchen clean and safe, and supporting the team.

Key responsibilities

• Prepare food as ordered by the Executive Chef and Sous Chef, following recipes, photos and set standards.
• Help with the morning meal preparation (M.E.P.), check that it is cleared and store leftovers in the refrigerator.
• Clean and sanitise the work area after each dish and before leaving the kitchen.
• Cover dishes with foil or film paper before storing them in the cold room.
• Train subordinate staff in their daily duties and help other cooks in any department when asked.
• Ensure the kitchen is clean and tidy before departure and that equipment is cleaned and reported if faulty.
• Maintain a safe work environment and report or fix safety hazards.
• Perform other duties assigned by management.

Required profile

• High school diploma or equivalent, or a culinary school qualification.
• Certification in Food & Safety.
• At least 2 years of experience in the hotel industry, including at least 1 year in a similar position.
• Fluency in English or another language, written and spoken; knowledge of a second language is a plus.

• Excellent use of cooking methods, ingredients, equipment and processes.
• Knowledge of best practices for safety and sanitation.
• Ability to work efficiently under pressure and manage time well.
• Good communication and interpersonal skills.
