Commis - Luxury Resort Hotel

About the role

Constance Le Chaland, a luxury resort on the south-eastern coast of Mauritius, is looking for a commis to join its kitchen team. The role covers meal preparation, set-up and cleaning, under the supervision of the chef.

Key responsibilities

• Fill in attendance sheets as soon as duty resumes.
• Check the meals of the day and liaise with the butcher on the amount of meat required.
• Check the fridge, inform the chef and make the requisition for the day.
• Verify whether food from the previous set-up can still be used, paying close attention to dates of consumption.
• Start the general set-up of the day, chop the vegetables needed and cook meals under the supervision of the superior.
• Store and laminate all products, keep the kitchen safe and clean and clean equipment after use.
• Prepare food and set-up for the buffet, hand over properly to the next shift and train, assist and coach trainees.
• Perform any other duties assigned by the Executive Chef.

Required profile

• Middle or secondary education; additional training or certificates in the field are a plus.
• Food handler certificate is mandatory.
• At least 1 year of experience in the hotel industry; proven experience in top luxury resorts is a plus.

Required skills

• Sound knowledge of food health and safety regulations.
• Fluency in English or another language, written and spoken; knowledge of a second language is a plus.
• Self-motivated, proactive, organized, with great attention to detail and good communication skills.
• Ability to work in a high-pressure, fast-paced environment.
